Children love souvenirs. Mine are no exception. We made a few rules when it comes to buying things.
#1 set a dollar amount, and stick to it. If your child wants multiple items within that budget or just one big thing it will be their choice.
#2 They must buy their item on the last day of the vacation. It is inevitable that the first thing they see is what they want, but then as soon as they go to the next store they see something they want more. I tell my children to look at everything in all the stores so they pick their favorite thing, and then on the last day we buy it. The only exception is if you are buying a hat or Mickey ears. you want to buy those right away so they can wear them the whole time.
I try to guide my children to buy something they will use or play with for longer than 5 minutes. Great souvenirs we have found are Mickey water bottles, t-shirts, hats, and art sets.
